Chef Troy Graves

 
 

Known for…

mature, composed and imaginative dishes, Chef Troy Graves made his mark on Chicago's food scene with the launch of Tallulah in 2008 in Lincoln Square. Receiving rave reviews from guests, food writers, and industry tastemakers, Tallulah was awarded 3 stars from Phil Vettel of the Chicago Tribune.  Chef Graves’s leadership in Chicago restaurants continued for over fifteen years including roles as Executive Chef at Eve and Meritage Café and Wine Bar. In each role, Graves received critical praise for his ability to constantly reinvigorate simple and recognizable preparations of classic global cuisine.

In 2012, Graves opened his own restaurant, Red Door, a chef driven neighborhood favorite, specializing in a locally sourced seasonal menu.  At Red Door the influence of a scratch kitchen was also reflected in the beverage program which featured Chef Graves’s ginger beer and a rotating selection of house made sodas.  

Graves dishes have also been featured at Chicago Gourmet, Green City Market Chef BBQ and Baconfest Chicago.
